Instant Pot Ribs with Dr Pepper BBQ Sauce

They're fall-off-the-bone good!

If you’ve never tried cooking with Dr Pepper before, Ree Drummond would beg you to reconsider. "Dr Pepper is an addiction in our neck of the woods," she says. "I do love cooking with Dr Pepper. When it's cooked down, it's just a perfect mix of flavors." She's right, of course, especially when it comes to these Instant Pot ribs. Cracking open a can of soda to cook the ribs actually tenderizes and flavors the meat, resulting in a crowd-pleasing BBQ dinner you can make year-round. Not only are these sticky, tender, fall-off-the-bone ribs easy to make, but the Instant Pot helps to cut down on cook time so they come together faster than most other traditional rib recipes.

How do you make ribs in an Instant Pot?

Here’s how it breaks down in five simple steps:

1. Season the ribs.

2. Add the ribs and Dr Pepper to the Instant Pot.

3. Cook the ribs on high pressure for 25 minutes.

4. Make the BBQ sauce and coat the ribs with the sauce. 

5. Broil the ribs to give them a sticky finish.

How many ribs can fit in an Instant Pot?

We use 2 baby back ribs (about 5 pounds total) to fit in one Instant Pot. You can arrange the racks whole in a circle or cut them up into pieces. (Note: The pieces will be easier than wrangling two whole racks into the pot).

Ingredients

For the Spice Rub:

  • 2 Tbsp.

    brown sugar

  • 2 Tbsp.

    smoked paprika

  • 1 tsp.

    garlic powder 

  • 1 tsp.

    dry mustard powder

  • 1 Tbsp.

    kosher salt

  • 1 tsp.

    black pepper

  • 1/2 tsp.

    cayenne pepper

For the Ribs and Dr. Pepper BBQ Sauce:

  • 2

    racks baby back ribs (about 5 lbs total)

  • 12 oz.

    Dr Pepper (1 can)

  • 1 cup

    ketchup

  • 1/3 cup

    apple cider vinegar

  • 3 Tbsp.

    brown sugar

  • 1/4 cup

    soy sauce

  • 1 tsp.

    ground black pepper

Directions

    1. Step 1For the spice rub: In a small bowl, combine the brown sugar, smoked paprika, garlic powder, dry mustard, salt, black pepper and cayenne.
    2. Step 2For the ribs: Remove the membrane from the underside of the ribs. Rub the spice mixture all over. Set aside for 30 minutes, or up to 8 hours (in the refrigerator).
    3. Step 3Add the Dr Pepper to the Instant Pot and place the trivet (that came with the Instant Pot) over top. Arrange the ribs on the trivet in concentric circles with the meaty side facing out.
    4. Step 4Cover the Instant Pot and seal to close. Select HIGH PRESSURE and set the timer for 25 minutes. When the timer is up, let the pressure naturally release for 10 minutes, then manually release. Remove the ribs and transfer to a sheet tray, meat-side-up, to let cool slightly.
    5. Step 5Set the Instant Pot to SAUTE. Cook the liquid to reduce by one-half, about 15 minutes. Add the ketchup, vinegar, brown sugar, soy sauce and black pepper, and whisk well to combine. Cook for 10 to 15 minutes, whisking frequently, until thickened like BBQ sauce.
    6. Step 6Heat a broiler to high heat. Brush the tops with the BBQ sauce sauce and broil for 4 minutes to slightly caramelize. Brush all over with more sauce and serve immediately.

After cooking in the Instant Pot, the ribs can be cooled completely and refrigerated overnight. Brush with BBQ sauce and heat under the broiler for 10 minutes, flipping once, to reheat.
