boneless half ham (3 to 3 1/2 lbs.)
- 1/3 cup
- 3 Tbsp.
dark brown sugar
- 2 Tbsp.
fresh grapefruit juice
- 1 tsp.
chipotle chile powder
- 1 tsp.
cumin seeds, crushed
- 1/2 tsp.
kosher salt
- 1/4 tsp.
black pepper
Directions
- Step 1Preheat the oven to 325°F. Line a baking sheet with foil.
- Step 2Place the ham cut-side down on the prepared baking sheet. Score the skin about ½ inch deep with a sharp knife, tracing over the existing lines.
- Step 3In a small saucepan, stir together the Maille Honey Dijon Mustard, brown sugar, grapefruit juice, chipotle powder, cumin, salt, and pepper over medium heat. Cook until smooth and syrupy, about 5 minutes.
- Step 4Brush half the glaze all over the ham. Cover with foil and bake for 30 minutes. Increase the oven temperature to 425°F, remove the foil, and brush the remaining glaze over the ham. Bake, rotating halfway through, until the skin is darkened and caramelized, 35 to 40 minutes more.
- Step 5Let the ham rest for 20 minutes before thinly slicing and serving.
