Kid-friendly recipe coming up! If you're having a day where you don't feel like cooking but you've got mouths to feed, let me introduce you to my secret weapon: pizza bagels. You can really pull any odds and ends out of the fridge, pile 'em on a split bagel, and pop 'em in the oven until nice and toasty. Your kids, who only ever want homemade pizzas anyway, will be utterly delighted.
In this recipe, I make good ol' classic pepperoni and cheese bagels, and a different flavor combination that's a little more grown up and geared toward my personal tastes. It's a spin on one of my favorite pizzas at P-town Pizza and features salty prosciutto, sweet fig preserves, tangy goat cheese, arugula, and a drizzle of balsamic glaze. Boy is it scrumptious. Why kind of bagels are best for pizza bagels?
I love asiago bagels for this, which are a type of bagel with asiago cheese baked in the dough and/or sprinkled on top. But you can really use any savory bagel, whether it's a plain bagel, everything bagel, or onion bagel. Just grab some from your local grocery store.
What other bagel toppings can you use?
Get creative here! Any of your favorite pizza toppings work. If you have leftover barbecue chicken or pulled pork in the fridge, you could use that. Italian sausage and any number of veggies like bell pepper, onion, or mushrooms would be delightful. You could also try a Hawaiian pizza bagel with ham and pineapple.

Ingredients

asiago bagels, split
- 1/4 cup
roasted garlic marinara
- 1/4 cup
grated mozzarella (about 2 ounces)
- 12
slices cup-and-crisp-style pepperoni
- 2 Tbsp.
olive oil
- 2 Tbsp.
grated parmesan cheese, plus more for garnish
- 2
slices prosciutto
- 2
mounded tablespoons fig preserves
- 1/3 cup
arugula
- 2 Tbsp.
crumbled goat cheese
Balsamic glaze, for drizzling
Directions
- Step 1Preheat the oven to 475℉.
- Step 2On a small baking sheet, arrange the bagel halves cut-side up. Divide the marinara between 2 of the bagel halves and spread evenly. Top each of the marinara bagels with 2 tablespoons mozzarella and 6 slices pepperoni.
- Step 3Drizzle each of the 2 remaining bagel halves with 1 tablespoon olive oil and sprinkle with 1 tablespoons parmesan. Arrange a slice of prosciutto on each.
- Step 4Bake the pizza bagels until the cheese is melted, the pepperoni have cupped, and the prosciutto is slightly crisp, 8 to 10 minutes.
- Step 5Sprinkle the pepperoni pizzas with a little parmesan cheese. Add dollops of fig preserves to the prosciutto pizzas, then top with the arugula and goat cheese. Drizzle the prosciutto pizzas with balsamic glaze before serving.
