Long spears of fresh broccoli are soaked in a garlicky balsamic marinade, then hit the grill, where the florets get charred and crispy while the stems become tender. A final squeeze of fresh lemon adds a hit of brightness to balance all the flavors. It’s fast, fresh, and no oven is required (though you could use your grill pan in a pinch inside, too!).
How do you keep broccoli from falling through the grill grates?
To avoid losing broccoli to the coals, slice it into long spears measuring about 2-by-4 inches. The larger size helps the pieces lie flat on the grill and provides more surface area for those delicious char marks. For extra insurance, you can use a grill basket if you have one.
Can you make grilled broccoli in advance?
Grilled broccoli can be made up to 5 days ahead and kept in the refrigerator in an airtight container. To reheat, warm it in a 325°F oven for about 10 minutes or in a skillet over medium heat. Or throw it back on the grill over indirect heat until it’s crisped up and heated through. To get a head start on meal prep, the broccoli can be marinated up to 2 hours in advance.
Can you use this grilled broccoli marinade on other vegetables?

medium heads of broccoli cut into large 2-by-4-inch spears
Juice of 1/2 lemon
Directions
- Step 1Preheat a grill or grill pan over medium heat. Lightly brush the grates or pan with oil.
- Step 2In a large bowl, whisk together the olive oil, balsamic vinegar, black pepper, red pepper flakes, garlic, and 1 teaspoon salt. Add the broccoli spears and toss to coat. Allow to stand for 15 minutes and up to 2 hours.
- Step 3Sprinkle the broccoli with the remaining ½ teaspoon salt. Grill the spears, covered, flipping once halfway through, until the stems start to brown and the florets begin to char, 8 to 10 minutes.
- Step 4Transfer the broccoli to a platter and squeeze over the juice.
