If there's one thing everyone should learn, it's how to cook a perfect pot of rice. There are countless ways to cook rice—using a rice cooker, steamer basket, microwave, oven, or even boiling it in a large pot like pasta. This recipe adheres to the tried-and-true method of cooking it in a saucepan on the stove for the fluffiest, most evenly textured rice. Having a consistent and reliable rice recipe is essential, whether you need some for a casserole, your favorite rice bowl, or just a simple side dish. Keep reading for everything you need to know about cooking rice.

Do you have to rinse rice before cooking?

Yes. Rinsing rice removes excess starch, resulting in fluffy, separated grains. Simply place the rice in a strainer and rinse with cold water until it runs clear. Remember that this recipe is specifically for long-grain, medium-grain, or short-grain white rice. For risotto or paella recipes where the starch is essential to the texture of the final dish, you should not rinse the rice.

How much water do you need to cook rice?

The instructions on most rice packaging suggest a 2:1 ratio of liquid to rice, but achieving fluffy rice with separated grains often requires a bit less water. A ratio of 1 ¾ cups of water to 1 cup of rice works well.

Should you soak rice before cooking?

Soaking rice for about 30 minutes can make it more aromatic and help it cook faster, but it usually isn't necessary. If you do soak, you'll need less water for cooking—approximately 1 ½ cups of water per cup of rice. Keep in mind, soaking rice for more than 2 hours can result in gummy rice.

Should you season your rice?

Everything tastes better with a good pinch of salt. This ingredient is totally optional, but it is recommended for a more balanced and enjoyable flavor. You can also add 1 tablespoon of oil or butter for richness. For an even deeper flavor, consider using the pilaf method: Sauté the rice in oil or butter over medium heat until it becomes toasty before adding water and continuing with the recipe.

How long should you cook rice?

First, let the rice simmer uncovered for about 5 minutes over medium-low heat. Then, turn the heat down to low, cover the pot, and let it cook for another 15 to 18 minutes. Simmering it uncovered at first helps quickly get rid of extra water, which keeps the rice from turning mushy. Once you cover the pot, the steam trapped inside finishes off the cooking.

Should you let rice rest?

Yes. Resting the rice covered for 10 minutes after removing it from the heat allows the rice to absorb all of that trapped steam, resulting in the fluffiest grains possible. 

How long can you store cooked rice?

Cooked rice can be stored in an airtight container in the refrigerator for up to 4 days. Completely cooled rice can be frozen in a freezer-safe bag or an airtight container for up to 3 months.

How do you reheat rice?

It is important to reheat rice safely and to the proper temperature of at least 165 degree Fahrenheit. The easiest way is to use a microwave. Place the desired amount of rice in a microwave-safe bowl and cover with a damp paper towel. Microwave in 30-second intervals, stirring in between to separate clumps of rice, until hot. You can also place a few tablespoons of water per cup of cooked rice in a saucepan. Cover and heat over medium-low heat until steaming hot, 5 to 7 minutes.

  • 1 cup

    long-grain, medium-grain, or short-grain white rice

  • 1 Tbsp.

    olive oil or salted butter (optional)

  • 1/4 tsp.

    kosher salt (optional)

Directions

    1. Step 1Place the rice in a fine mesh sieve. Rinse under cold running water, gently swishing with your hands, until the water runs clear. Allow to drain thoroughly.
    2. Step 2In a medium saucepan, combine the rice and 1 ¾ cups water. Add the salt and oil or butter, if using.
    3. Step 3Bring the rice to a simmer over medium-low heat. Allow it to simmer, uncovered, for 5 minutes. Reduce the heat to low, cover, and cook until the rice is tender, 15 to 18 minutes. Remove from the heat.
    4. Step 4Allow the rice to sit, covered, for 10 minutes. This will allow the water to absorb and help ensure fluffy rice. Fluff with a fork before serving.
