Ingredients
- 3 lb.
ground beef
- 1 Tbsp.
salt
- 1 1/2 tsp.
black pepper
- 2
large Roma tomatoes
- 1 tsp.
olive oil, plus more for grilling
- 1
pineapple, peeled, cored and cut into rings
- 6
slices cheddar cheese
- 3
thick slices deli ham, halved crosswise
Butter, for the rolls
- 6
kaiser rolls or hamburger buns, split
- 1/2
red onion, very thinly sliced
Lettuce, for topping
Potato chips, for serving
Directions
- Step 1Heat a grill or grill pan to medium high. Mix the ground beef in a large bowl with 2 teaspoons salt and the pepper. Form the mixture into 6 equal patties.
- Step 2Halve the tomatoes lengthwise and toss with the olive oil and the remaining 1 teaspoon salt.
- Step 3Brush the grill grates with olive oil. Place the tomatoes and pineapple slices on the grill and cook until softened and grill marks form, 5 to 6 minutes per side
- Step 4Meanwhile, grill the beef patties until marked, 4 to 5 minutes, then flip and cook 2 to 3 minutes longer.
- Step 5Top each burger with a slice each of cheddar and ham and cook until the cheese melts, 2 to 3 minutes longer.
- Step 6Butter the rolls and grill them until golden brown and marked, 1 to 2 minutes. Chop the grilled tomatoes and spread on both sides of each roll. Top with the burgers, a few red onion slices, some lettuce and grilled pineapple, then bring all the craziness together. Serve with chips.
