Watermelon is always a good idea in the summertime! And every year, I'm always looking for more ways to eat it. I love making watermelon salsa and a round of watermelon margaritas to go along with it! Did you know that you can grill watermelon? Now, you do. It turns it into a sweet, smoky, caramelized treat! But this dish is one of the coolest, refreshing summer salads. It's sweet and salty, crunchy and juicy, and all around so tasty. You're going to love it. Just make sure you know how to pick a good watermelon. (I don't mean pick as in harvest, I mean pick as in choose the best one at the grocery store. Okay, moving on!) 

What is watermelon feta salad made of?

The base is watermelon, cucumber, feta cheese, fresh mint, and a sprinkle of pistachios. There's nothing complicated about it, which is music to my ears!

Why do people eat watermelon with feta?

There's something magical that happens when you combine sweet, juicy watermelon with salty, crumbly feta. Seriously, it is magical. The two balance each other out in the best way possible. Cucumber, mint, and roasted pistachios only add to the deliciousness and make this summer side dish undeniably fresh! 

What's watermelon feta salad dressing made of?

It's so simple you can hardly even call it a dressing. All you do is drizzle olive oil and vinegar (rice or white balsamic) over the watermelon-cucumber-mint mixture and it's practically ready to serve. But don't skip the feta and pistachios—they're important!

Ingredients

  • 5

    Persian cucumbers, sliced

  • 1/2

    small seedless watermelon, cut into 1-inch chunks (about 12 c.)

  • 1/2 cup

    fresh mint, chopped, divided

  • 1/2 tsp.

    kosher salt

  • Black pepper, to taste

  • 1/4 cup

    olive oil

  • 1/4 cup

    rice vinegar or white balsamic vinegar

  • 4 oz.

    feta cheese, crumbled (about 1 c.)

  • 1/3 cup

    chopped roasted pistachios

Directions

    1. Step 1Combine the cucumbers, watermelon, 1/4 cup mint, the salt and a generous amount of pepper in a large bowl. Drizzle with the olive oil and vinegar and toss well.
    2. Step 2Spoon the salad onto a platter. Sprinkle with the feta, pistachios and remaining 1/4 cup mint. Grind a little more pepper over the top.
