Ingredients
- 3
bell peppers (red, yellow and/or orange), cut into large chunks
- 2
red onions, trimmed and cut into quarters
- 3 Tbsp.
olive oil
- 1 tsp.
dried sage
- 1 tsp.
kosher salt
Black pepper, to taste
- 12
Italian sausages
- 4
hoagie or sub rolls
Directions
- Step 1Preheat the oven to 425˚. Spread the peppers and onions on a baking sheet. Drizzle with the olive oil, sprinkle with the sage, salt and some pepper and toss, breaking up the onions a bit as you do.
- Step 2Put the sausages in and around the vegetables on the baking sheet.
- Step 3Bake until the sausages are cooked through and the vegetables are tender, 30 to 35 minutes.
- Step 4Slice the sausages and serve on rolls with the roasted vegetables.
