Steakhouse Pizza with Blue Cheese

This is the ultimate meat lover's pizza!

Store-bought pizza dough makes this dinner super easy. Just let the dough come to room temperature before you start cooking.

Ingredients

  • 1

    skirt steak or flank steak (1 1/2 to 2 pounds)

  • Kosher salt and black pepper, to taste

  • 1 Tbsp.

    olive oil, plus more for brushing and drizzling

  • 1

    large red onion, halved and thinly sliced

  • 2 Tbsp.

    balsamic vinegar

  • 1 lb.

    store-bought pizza dough, at room temperature

  • 3 cups

    shredded mozzarella cheese (about 12 ounces)

  • 2 oz.

    soft blue cheese, crumbled

  • 1 1/2 cups

    packed baby spinach

  • Shaved parmesan cheese, for topping

Directions

    1. Step 1Position a rack in the bottom of the oven. Preheat the oven to 500˚. Season the steak with salt and pepper. Heat a large grill pan over medium heat. Grill the steak until medium rare, just about 3 to 4 minutes per side. You want the steak to be nice and pinkish red in the middle, so don’t overdo it. Remove it from the heat and place on a cutting board to rest.
    2. Step 2Heat the olive oil in a large skillet over medium heat. Add the red onion slices and balsamic vinegar and cook, stirring, until soft, 12 to 15 minutes.
    3. Step 3Brush a rimmed baking sheet with olive oil. Stretch the pizza dough on the baking sheet with your fingers until the dough reaches the edges of the pan.
    4. Step 4Sprinkle the mozzarella over the dough. Scatter the onion slices on top, then sprinkle with the blue cheese. Bake until the crust is golden and the cheese is bubbly and hot, 12 to 15 minutes.
    5. Step 5Drizzle the spinach with olive oil in a bowl and season with salt and pepper. Pull the pizza from the oven and immediately scatter the spinach over the top.
    6. Step 6Thinly slice the steak. Lay the steak slices on the pizza. Sprinkle with the parmesan. Slide the pizza onto a cutting board and cut into pieces.
