Ingredients
For the mix:
- 1 1/2 cups
all-purpose flour
- 1/4 cup
sugar
- 1 1/2 tsp.
baking powder
- 1/2 tsp.
baking soda
- 1/4 tsp.
kosher salt
- 1/2 cup
chopped freeze-dried strawberries
- 1/2 cup
freeze-dried-blueberries
- 1/2 cup
sweetened shredded coconut
- 1/2 cup
chopped toasted pecans
- 1/2 cup
buttermilk powder
For the pancakes:
- 1
jar Berry-Nut Pancake Mix
- 1
egg
- 1 1/4 cups
water
- 1 tsp.
vanilla
- 2 Tbsp.
butter
Directions
To assemble the jar:
- Step 1Whisk together the flour, sugar, baking powder, baking soda, and salt.
- Step 2In a 1-quart jar, layer the flour mixture, strawberries, blueberries, shredded coconut, pecans, and buttermilk powder.
To make the pancakes:
- Step 1Prep time: 5 minutes. Total time: 25 minutes. Makes 12 pancakes.
- Step 2Whisk 1 egg, 1 1/4 cups water and 1 teaspoon vanilla in a large bowl. Add the Berry-Nut Pancake Mix and stir with a wooden spoon until just combined. Heat a griddle over medium heat and coat with 2 tablespoons butter. Scoop 1/4 cupfuls of the pancake batter onto the hot griddle and cook until golden brown, 2 to 3 minutes per side. Serve with butter and maple syrup.
