Berry-Nut Pancake Mix

Nothing beats homemade pancake mix.

Ingredients

For the mix:

  • 1 1/2 cups

    all-purpose flour

  • 1/4 cup

    sugar

  • 1 1/2 tsp.

    baking powder

  • 1/2 tsp.

    baking soda

  • 1/4 tsp.

    kosher salt

  • 1/2 cup

    chopped freeze-dried strawberries

  • 1/2 cup

    freeze-dried-blueberries

  • 1/2 cup

    sweetened shredded coconut

  • 1/2 cup

    chopped toasted pecans

  • 1/2 cup

    buttermilk powder

For the pancakes:

  • 1

    jar Berry-Nut Pancake Mix

  • 1

    egg

  • 1 1/4 cups

    water

  • 1 tsp.

    vanilla

  • 2 Tbsp.

    butter

Directions

  • To assemble the jar:

    1. Step 1Whisk together the flour, sugar, baking powder, baking soda, and salt.
    2. Step 2In a 1-quart jar, layer the flour mixture, strawberries, blueberries, shredded coconut, pecans, and buttermilk powder.
  • To make the pancakes:

    1. Step 1Prep time: 5 minutes. Total time: 25 minutes. Makes 12 pancakes.
    2. Step 2Whisk 1 egg, 1 1/4 cups water and 1 teaspoon vanilla in a large bowl. Add the Berry-Nut Pancake Mix and stir with a wooden spoon until just combined. Heat a griddle over medium heat and coat with 2 tablespoons butter. Scoop 1/4 cupfuls of the pancake batter onto the hot griddle and cook until golden brown, 2 to 3 minutes per side. Serve with butter and maple syrup.
