And while homemade party dips and buffalo chicken recipes top every list, this buffalo chicken dip may just be the best of all, bringing all of those spicy, cheesy flavors and ooey-gooey goodness together in one delicious appetizer. Bring it to the Super Bowl party and this dip will be gone before kickoff. But don't save it for just special occasions. Pick up a rotisserie chicken from the supermarket and whip up this 30-minute snack any day of the year!
What is buffalo chicken dip?
Buffalo chicken dip is a tried-and-true combination of cream cheese, buffalo sauce, ranch dressing, cooked chicken, and cheese. You can definitely combine different types of cheese—sharp cheddar, colby jack, or even mozzarella would give this dip great flavor and tons of stringy cheese pulls. The salty, funk of blue cheese gives this dip an added sharpness and flavor reminiscent of dipping a plate full buffalo wings into some blue cheese dressing. Yum! Add an extra sprinkle on top before baking if you're a fan.
I don't like blue cheese. Can I leave it out?
Sure! If you don't love blue cheese, simply don't use it in this recipe. The dip will still be gooey and flavorful without it.

The short and happy answer: cheese! And this cheese dip calls for three varieties: cream cheese, cheddar cheese, and blue cheese. Cream cheese is the hero that thickens this dip and gives it texture. Straight out of the oven, the dip will be a little bit thinner when scooped. But as the dip cools slightly, it will thicken and set. (This dip tastes incredible hot or at room temperature!)
Can you make buffalo chicken dip ahead of time?
Sure can! Prepare the dip through step 2 up to one day ahead. Then place it in the baking dish, top with cheese, cover, and refrigerate. Take the dip out of the fridge 30 minutes before you are ready to bake it to knock off the chill. Then bake as usual. You may need to cook the dip a few minutes longer than the recipe directs, but just keep an eye on it!
What goes well with buffalo chicken dip?
Tortilla chips or potato chips are delicious with buffalo chicken dip, but you can also scoop it up with fresh cut veggies! Think carrots and celery. Of course, a sturdy cracker or hunk of baguette would be tasty too.

buffalo sauce
- 1/3 cup
ranch dressing
- 2 cups
chopped, cooked chicken
- 1/3 cup
blue cheese crumbles
- 2 cups
sharp cheddar cheese, divided
- 4
green onions, thinly sliced, divided
Veggie sticks and chips, for dipping
Directions
- Step 1Preheat the oven to 375°F.
- Step 2In a medium bowl, use a rubber spatula to soften the cream cheese until very creamy and smooth. Mix in the buffalo sauce and ranch dressing. Stir in the chicken, blue cheese, 1 cup of cheddar cheese, and half of the green onion.
- Step 3Transfer to a 1 1/2 quart casserole dish, such as an 11-by-7-inch casserole dish. Top with the remaining cheddar cheese. Bake until the edges are bubbly and the cheese is melted on top, 18 to 20 minutes. Remove from the oven and let rest for 5 minutes. Sprinkle with the remaining sliced scallions. Serve with veggies and chips.
Tip: Use leftover cooked chicken or rotisserie chicken for this recipe! Other cooked chicken products may contain too much sodium and make this dip too salty.
