If you have an elaborate New Year's Eve dinner planned, buy yourself some time with a few easy appetizers. Rather than asking when dinner will be ready, your hungry guests will happily snack away while you execute the finishing touches. This warm, molten wheel of baked brie takes pre-dinner snacking to the next level. Plus, it's one of the easiest starters you'll ever make.

Do you take the rind off brie before baking?

No need to take the rind off brie before baking. The rind is entirely edible and very neutral in flavor. It's also the hero that keeps this wheel of cheese in one piece while it's turning into its gooey state in the oven.

How do you bake brie that has been cut?

It's not recommended to bake brie that has been cut. Brie has a soft, creamy texture that melts very quickly when heated. That said, a wedge of brie, with two cut sides, will not work for this recipe. When heated, it will be a pool rather than a decadent, melty wheel of brie.

What pairs well with baked brie?

Brie is an extremely rich type of cheese. To balance it out, pair the cheese with fresh, sweet fruits like apples and grapes. Brie is also soft, especially when baked, so a sprinkle of chopped nuts can lend texture. Think: chopped almonds, pistachios, or walnuts. Top the brie with honey, a sprinkle of sea salt, and fresh herbs. You can keep it simple or add it to a whole charcuterie board.

What kind of crackers go with baked brie?

Any sort of sturdy buttery cracker works well with brie, but toasted bread slices also make a scrumptious dipper.

Ingredients

  • 1

    (12- to 14-oz.) wheel of brie

  • 1/2 tsp.

    chopped fresh thyme leaves

  • 1/2 tsp.

    chopped fresh rosemary leaves

  • 2 Tbsp.

    honey

  • Sea salt, optional

  • Toasted bread, apple slices, and/or grapes, to serve

Directions

    1. Step 1Remove the brie from the refrigerator. Remove any paper wrapping and return the wheel to the bottom part of its wooden box or place it on a small square of parchment paper (that is slightly larger than the brie wheel itself). Make very shallow slits across the top of the brie, just through the rind layer, every 1/2-inch to 1-inch, in a criss-cross pattern. Let rest at room temperature for 30 minutes.
    2. Step 2Preheat the oven to 350°F. Place the brie on a small sheet tray. Sprinkle the top with the fresh thyme and rosemary, and drizzle with honey. Bake for 20 to 25 minutes, until very soft.
    3. Step 3Carefully transfer the brie, in the box or on the sheet of parchment paper, to a serving plate. Serve warm alongside toasted bread, apple slices and/or grapes, for serving. 

You can also "bake" this brie in the microwave! Place the cheese wheel on a small piece of parchment paper, on a plate, and cook on high for two minutes.
