Raise your hand if you read the book Green Eggs and Ham when you were little. Most of us, right? Okay, now raise your hand if you've ever eaten green eggs and ham. Were they a ghastly green color, courtesy of food coloring? With all the love in our hearts for the dedicated moms and kindergarten teachers out there, there's a more delicious—and natural—way to enjoy the breakfast that Dr. Seuss made famous. All you need are some nutritious greens and a trusty cast-iron skillet, and you're on your way to a delicious, healthy breakfast. Whether you're looking for a lucky start to your St. Patrick's Day celebration or you need a fun new recipe to headline your weekend brunch, this fluffy, savory skillet frittata is the just the ticket!

What makes green eggs and ham green?

Many recipes for green eggs and ham use green food coloring to tint the eggs (and sometimes even the ham!) a bright shade of green. But if your appetite reacts to green meat with a resounding "yikes!" like ours do, try this less literal recipe, which checks the "green" box with lots of fresh kale that gets nice and crispy on top in the oven.

What eggs are best for green eggs and ham?

Any time that you're making a recipe in which eggs are the star ingredient, it's a great idea to splurge for the best eggs you can find. If you're lucky enough to live near a farmers' market or have neighbors with chickens, fresh eggs are awesome in this dish. Second to that, look for eggs in the grocery store that are from free-range, organically fed, or hormone-free chickens. Again, regular eggs are just fine, but good eggs make this dish even better.

What ham is best for green eggs and ham?

This recipe calls for breakfast ham slices or Canadian bacon (which is technically ham) that are cut into thin, 3-inch-round slices. If you can't find those at the supermarket, you can use a round cookie cutter to cut out circles of thick-cut deli ham, or substitute leftover ham, about 4 ounce or 1 cup diced. Or, skip the ham altogether and serve alongside bacon!

Ingredients

  • 1 Tbsp.

    olive oil

  • 1

    bunch curly kale (7 oz.)

  • 2 tsp.

    salt, divided

  • 1 tsp.

    ground black pepper, divided

  • Nonstick cooking spray

  • 6

    slices breakfast ham or Canadian bacon, halved (4 oz.)

  • 12

    large eggs

  • 2 cups

    heavy cream

  • 1 cup

    grated sharp cheddar cheese, divided

  • 1/2 cup

    grated Parmesan cheese

  • 1/4 cup

    chopped mixed herbs, such as chives, thyme, and parsley, plus additional for garnish

Directions

    1. Step 1Preheat the oven to 350°. Remove the tough stems from the kale and tear the leaves into large 3-inch pieces. Place the kale in a large bowl; drizzle it with olive oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Using your hands, scrunch the kale until it is slightly crushed and softened, about 1 minute.
    2. Step 2Spray a 10-inch cast-iron skillet with nonstick cooking spray. Place the kale in the skillet in an even layer. Tuck the ham slices into the kale. 
    3. Step 3In a medium bowl, whisk the eggs until the yolks and whites are combined. Stir in the heavy cream, 3/4 cup of the cheddar cheese, parmesan cheese, herbs, and the remaining 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
    4. Step 4Pour the egg mixture over and around the kale and the ham. Sprinkle with the remaining 1/4 cup cheddar cheese. Bake until the egg mixture is set, 40 to 45 minutes. Garnish with additional herbs, if desired.
