Lemon pepper chicken ranks high among the most comforting—and easy—weeknight dinners. For starters, nearly everyone loves chicken. Combine that popularity with a fresh and flavorful seasoning blend of zippy lemon and spicy pepper, and you've got a dish that nobody will turn down. This recipe uses fresh lemon zest for the biggest flavor punch. 

What's in lemon pepper seasoning?

As you might have guessed, lemon and pepper are the main ingredients. This recipe uses fresh lemon zest and pepper, but you can use a store-bought blend if you're in a hurry. Store-bought lemon pepper often contains salt, so start with using 2 teaspoons of lemon pepper seasoning on the chicken and 1 tablespoon in the flour mixture, and leave out all the remaining salt, pepper, and lemon zest that the recipe calls for. Add additional salt after cooking, if needed. 

How do you make chicken cutlets?

These days, most chicken breasts are pretty thick; cutting them into thin cutlets is the secret to help them cook through quickly without browning too much or drying out. While you can sometimes find chicken cutlets at the grocery store, they're fresher and cheaper if you cut them yourself. To cut a chicken breast into a cutlet, lay the chicken breast on a plastic cutting board. Holding a sharp knife in your dominant hand and with your other hand pressing the chicken breast flat, carefully slice the chicken in half horizontally, keeping your knife level, parallel to the cutting board, and away from your top hand! If you're squeamish about touching raw chicken (let's face it: it's kinda icky), wrap your chicken hand with plastic wrap first. Who cares if you look silly? Do what makes you comfortable!

What's lemon pepper used in?

Lemon pepper is good with all kinds of things! Shake it on shrimp, sprinkle it over salmon, toss it with roasted potatoes, or stir it into butter to melt over freshly steamed peas, carrots, or asparagus. Ingredients

  • 1/2 cup

    all-purpose flour

  • 4 tsp.

    salt, divided

  • 4 tsp.

    ground black pepper, divided

  • 2

    lemons, zested and divided

  • 3

    boneless skinless chicken breasts, halved horizontally (or 6 cutlets), about 2 lb.

  • 4 Tbsp.

    butter, divided

  • 4 Tbsp.

    olive oil, divided

  • 3

    garlic cloves, thinly sliced

  • 1 cup

    chicken broth

  • Chopped parsley, for serving

Directions

    1. Step 1Stir together the flour, 2 teaspoons of the salt and 2 teaspoons of the pepper in a shallow bowl; reserve 1 tablespoon of this flour mixture and set aside.
    2. Step 2In another small bowl, stir together the remaining 2 teaspoons each of salt and pepper and the lemon zest until combined. Sprinkle the chicken evenly with this lemon-pepper mixture. 
    3. Step 3Dredge the chicken in remaining flour mixture to coat. Set aside. 
    4. Step 4Thinly slice one of the lemons and cut the other lemon into wedges; set them all aside.
    5. Step 5Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large nonstick skillet over medium-high heat until bubbly. In two batches, add the coated chicken to the skillet. Cook until the chicken is browned on both sides and reaches an internal temperature of 165°, 4 to 6 minutes per side (add the remaining 2 tablespoons olive oil in between batches, if needed). Transfer the chicken to a serving platter and tent with foil to keep warm. Remove the pan from the heat to let cool slightly.
    6. Step 6Reduce the heat to medium and return the skillet to the heat. Add the remaining 2 tablespoons of butter and the reserved 1 tablespoon of the flour mixture to the skillet. Cook, stirring constantly, until the flour is toasted, about 1 minute. Add the garlic, lemon slices and the chicken broth to the skillet. Cook, stirring occasionally, until the sauce is bubbling and slightly thickened, and the garlic is lightly browned, 2 to 3 minutes. Spoon the sauce and sliced lemons over the chicken. Garnish with parsley and serve with lemon wedges, if you like.
