Ingredients
- 2 Tbsp.
salted butter
- 1
medium shallot, chopped
- 2 Tbsp.
all-purpose flour
- 1 3/4 cups
half-and-half
- 3 cups
frozen peas (from a 16-ounce bag), thawed
- 2 tsp.
distilled white vinegar
Pinch of freshly grated nutmeg
- 1/2 tsp.
kosher salt
Black pepper, to taste
- 1/2 cup
crispy fried onions (such as
French’s)
Directions
- Step 1Melt the butter in a medium saucepan over medium heat. Add the shallot and cook until just softened but not browned, 1 to 2 minutes. Sprinkle in the flour and cook, stirring, until incorporated and bubbly, about 1 minute. Slowly stir in the half-and-half and bring to a simmer.
- Step 2Stir in the peas and cook until the sauce is thickened and the peas are just tender, 5 to 7 minutes. Stir in the vinegar, nutmeg, salt and a few grinds of pepper. Pour into a serving bowl and top with the fried onions.
