Salad… for breakfast? The first reaction for some might be a big "no way!" However, when looking for a healthy breakfast idea to fuel a busy morning, a breakfast salad checks all the boxes.

What makes a good breakfast salad?

First of all, it's good morning fuel! Loaded with fiber from leafy greens, lean protein from hummus, egg and yogurt, as well as healthy fats from olive oil and avocado, a breakfast salad is the kind of super food that tastes delicious, but also keeps you full until lunch.

Secondly, it comes together quickly! After packing lunches and snacks for the family, all before breakfast time, a breakfast that comes together with speed and ease is super important. Cook some hard-boiled eggs the night before or on Sunday night for the whole week and this salad comes together in less than five minutes. Forgot to boil those eggs? Fry or poach an egg as a salad topper in the amount of time it takes to plate up the rest.

What kind of greens are good for breakfast?

A sturdy green that is high in fiber offers lots of nutrients to start the day and will keep you fuller for longer. Baby spinach or kale are great options, but if mixed greens or chopped romaine is what's on hand, use those. If a warm breakfast feels like a better start, cook greens such as kale or spinach in a skillet with a little bit of olive oil until tender before plating up your salad.

What else can you use in a breakfast salad?

Truly, anything that sounds good at 8 in the morning! Top this salad with a couple of crispy pieces of bacon or a slice of smoked salmon. If you have roasted potatoes or air fryer sweet potato fries left over from last night's dinner, warm those up and serve them over top. A couple of crumbled tortilla chips or croutons work great to add crunch.

Ingredients

  • 3 Tbsp.

    hummus

  • 2 cups

    baby spinach

  • 1/4

    avocado, sliced

  • 5

    grape tomatoes, halved

  • Salt, to taste

  • Black pepper, to taste

  • 1 Tbsp.

    olive  oil

  • 1 tsp.

    red wine vinegar

  • 1

    hard-boiled egg, halved

  • Greek yogurt, optional 

  • Hot sauce, optional

  • 5

    Pita chips 

  • 1/2 tsp.

    Everything Bagel Seasoning

Directions

    1. Step 1Spread the hummus across the base of a wide bowl with the back of a spoon. Top with baby spinach, avocado slices, and grape tomatoes. Sprinkle with salt and pepper, then drizzle with olive oil and red wine vinegar.
    2. Step 2Top with the egg, then add a dollop of Greek yogurt, dash of hot sauce (optional), and broken pita chips, and sprinkle with Everything Bagel Seasoning, if you like. Stir it all up, mixing in the hummus from the bottom of the plate, and enjoy immediately.

If a warm fried egg in the morning is more your speed, top this salad with a perfect sunny-side up egg.
