Strawberry sorbet is one of the true delights of summer—sweet, refreshingly cold, and filled with fruity goodness, it's guaranteed to deliver maximum relief on a hot summer day (like the Fourth of July!). Of all the delicious strawberry desserts, its ingredient list is one of the most simple—just strawberries, sugar, lemon, a pinch of salt, and a little time.

Is sorbet the same as sherbet?

Folks often get sorbet and sherbet confused, and rightfully so. While sherbet is fruit-based, it almost always includes some sort of dairy, such as milk or cream. Sorbet does not include dairy, and is therefore a little more icy in texture. It's best to let it soften slightly before serving with your best ice cream scoop if a more smooth texture is preferred.

Is sorbet healthier than ice cream?

With regards to fat and calories, sorbet is considered by many to be a healthier choice than ice cream. While it can contain as much sugar as ice cream, it tastes much lighter because it's made with fruit. This freshness makes it the perfect choice for hot summer days.

Can you use frozen strawberries for sorbet?

Frozen fruit is an excellent choice for sorbets. Fruits picked and frozen at the peak of their ripeness yield a perfectly convenient alternative to fresh in-season fruit. 

Do I need an ice cream maker for sorbet?

Yes, an ice cream maker is crucial for this sorbet's smooth, fluffy texture. Simply freezing the mixture without churning will result in a dense block of fruity ice that's more akin to a giant popsicle than a scoop-able treat.

Ingredients

  • 2 1/2 lb.

    strawberries, halved (about 8 c.)

  • 1 cup

    granulated sugar

  • 3 Tbsp.

    fresh lemon juice

  • 1/8 tsp.

    kosher salt

Directions

    1. Step 1Place the strawberries, sugar, lemon juice, and salt in a food processor; puree until smooth, about 1 minute. 
    2. Step 2Strain the strawberry puree through a fine mesh strainer, pressing the solids with the back of a spoon. Discard the solids.
    3. Step 3 Transfer the strained strawberry mixture to an ice cream maker and freeze according to the manufacturer's instructions. Spoon the strawberry mixture into a loaf pan or freezer-safe container. Place a piece of parchment paper directly on the surface of the sorbet. Wrap the pan tightly in plastic wrap, and freeze until the sorbet is firm enough to scoop, about 4 hours.

To serve this sorbet, let it soften at room temperature for about 15 minutes or use an ice cream scoop or spoon dipped in hot water.
