Yogurt parfaits are the unsung heroes of any healthy breakfast spread. While some may scoff at the "fruit cup" when options like breakfast casserole or bacon are on the menu at brunch, a well-layered yogurt parfait can be just as delicious as dessert—and it's better for you!

Are yogurt parfaits good for you?

Compared to breakfast favorites like cinnamon roll monkey bread and sausage breakfast casserole, a yogurt parfait is indeed a healthier option! Yogurt has a good amount of protein and vitamin D, while the granola and fruit have healthy fiber and additional vitamins and minerals.

What's in a yogurt parfait?

Most parfaits are a layer-as-desired kind of dish that includes yogurt, granola, and fruit. Many recipes call for store-bought granola; this one includes a recipe for homemade granola crunch. Make a batch for the week! It will hold for up to 7 days in an air-tight food storage container.

What fruit is best for a yogurt parfait?

Fresh, in-season fruit always makes the best yogurt parfait. Berries and bananas are popular choices, along with tropical fruits like mango, pineapple, and kiwi. Don't be afraid of pitted stone fruit in the summer, like peaches, cherries, plums, and nectarines. And there's always citrus and pomegranate in the winter. But if you're craving strawberries and they're not in season, don't worry—a little sugar and a spritz of lemon juice will perk those off-season fruits right up.

What yogurt is best for parfaits?

Although it can be tempting to choose a "healthier" option like sugar-free non-fat yogurt, often times, those choices lead to big sacrifices in taste and texture. Opt for whole milk or even reduced fat yogurt, and look for naturally flavored and sweetened brands that will have a more pure, rich flavor.

Ingredients

For the Granola Crunch:

  • 2 cups

    oats

  • 1 cup

    chopped pecans

  • 3/4 cup

    light brown sugar

  • 1/2 cup

    all-purpose flour

  • 1

    stick salted butter, melted

  • 1

    egg white, beaten

For the Fruit:

  • 4 cups

    fresh fruit, such as strawberries, blackberries, and blueberries

  • 2 Tbsp.

    granulated sugar

  • 1 Tbsp.

    lemon juice

For the Yogurt:

  • 4 cups

    whole milk vanilla yogurt

  • 1/2 cup

    sour cream

Directions

    1. Step 1For the granola crunch: Preheat the oven to 350°. Stir together the oats, pecans, brown sugar, flour, melted butter, and egg white in a medium bowl until well combined. Spray a rimmed baking sheet with nonstick cooking spray; add the oat mixture in an even layer. Bake until golden brown, 20 to 25 minutes. Let cool completely.
    2. Step 2For the fruit: Meanwhile, stir together the fresh fruit, sugar, and lemon juice. Set aside.
    3. Step 3For the yogurt mixture: Stir together the yogurt and sour cream in a medium bowl.
    4. Step 4To assemble the parfaits, place a few spoonfuls of fruit in each glass. Top the fruit with 2 to 3 tablespoons granola, then about 1/4 cup yogurt. Repeat layers as desired. Top with more granola and fruit, if you like.
