Grilled Potatoes

Whether baked, mashed, or turned into a casserole... it's no secret that Ree Drummond loves a good potato recipe! Reminiscent of Ree's popular Crash Hot Potatoes, these grilled potatoes are summer's crispiest potato treat and they don't require heating up the house. The next time your menu includes grilled chicken, steak, or pork chops, prep some grilled potatoes to char alongside. They are the perfect BBQ side dish!

Do you need to boil potatoes before grilling?

It is very difficult to cook potatoes all the way through on the grill, without them getting too crispy, charred or drying out the flesh. The best way to prepare potatoes for the grill is to first boil them. Once cooked fork-tender, drain the potatoes and let them cool to room temperature. This allows the skin to dry, then get crispy on the grill, and also allows the flesh to firm up so that they don't fall apart when they hit the heat. 

Can you put potatoes directly on the grill?

As long as the potatoes are wider than the grates, you can put potatoes directly on the grill. Baby potatoes can be a little tricky to wrangle, as they do roll around. Like grilled shrimp, we found that placing the potatoes on a skewer helped to manage them more easily on the grill, and made it less likely to lose one to the flames. 

How long does it take for potatoes to be done on the grill? 

Once the grill is very hot, the potatoes need about 6 to 8 minutes per side to get crispy and charred.

Ingredients

  • 3 lb.

    baby red potatoes

  • Salt, plus more to taste

  • 8 to 10, 12-inch skewers

  • 1/4 cup

    salted butter

  • 1

    clove garlic, chopped

  • Black pepper, to taste

  • 2 Tbsp.

    grated parmesan cheese 

  • 2 Tbsp.

    chopped, fresh parsley or chives

Directions

    1. Step 1Place the potatoes in a large pot or Dutch oven and cover by 1 inch with cold water. Bring to a boil over high heat, then reduce to a simmer. Cook just until fork tender, 15 to 20 minutes. Drain and transfer to a plate to cool to room temperature. 
    2. Step 2Preheat a grill to medium-high heat (400 to 450°). Soak 10- to 12-inch wooden skewers in water.
    3. Step 3Meanwhile, combine the butter and garlic in a microwave safe bowl. Cook, covered, on high just until melted, 30 to 60 seconds. 
    4. Step 4Place 3 to 4 potatoes on each skewer. Brush all over with the butter mixture. Place the skewers over direct heat on the grill, and cook until golden and a little charred, 6 to 8 minutes per side. 
    5. Step 5Transfer to a serving platter. Brush with any remaining garlic butter, then sprinkle with parmesan cheese and fresh herbs.

Boil the potatoes just until the point of doneness. Potatoes can vary in size. Start checking super small potatoes at the 15 minute mark—they may need to come out of the water first.
