Halloween Cheesecake Bars

Pumpkin and chocolate? Yes, please!

Everybody loves a good cheesecake recipe, and these spooky Halloween cheesecake bars are a monster mash-up of everyone's favorite Halloween treats from the Oreo cookie crust to the candy eyeballs and orange jimmies on top. It's the best Halloween dessert for a party and a great way to get kids involved with decorating.

How do you soften cream cheese quickly?

In a hurry? Try one of three easy tips to quickly soften cream cheese before mixing the cheesecake batter: on the countertop, in warm water, or in the microwave. Room temperature ingredients will blend more smoothly when beaten so there won't be any lumps in the finished bars.  

How do you swirl cheesecake?

When it comes to swirling cheesecake, less really is more! The more zigging and zagging, the more the colors will blend and the less the swirls will show. Holding a skewer or a paring knife straight up, insert the tip into the cheesecake mixture and draw the letter "S" just a few times, working from top to bottom lengthwise, then crosswise. You can also skip the swirls altogether: Simply dollop over the pumpkin and chocolate mixtures and bake. 

How can you keep cheesecake from cracking?

Cheesecake can sometimes crack on top when baked too long or cooled too quickly (going straight from oven to fridge). The cheesecake is done when it passes the jiggle test (it wobbles slightly in the center). Let it sit at room temperature for an hour first before chilling. And if it does crack, just say it was the ghosts at your Halloween party!

Ingredients

For the Crust:

  • 40

    Chocolate sandwich cookies (1 lb.), such as Oreos

  • 6 Tbsp.

    salted butter, melted

For the Filling:

  • 2 lb.

    cream cheese, softened

  • 2 tsp.

    vanilla

  • 1 cup

    sugar

  • 1/4 tsp.

    kosher salt

  • 1 cup

    sour cream, at room temperature

  • 4

    large eggs, at room temperature

  • 1/4 cup

    canned pumpkin

  • 1/4 cup

    semisweet chocolate chips (1.5 oz.), melted and cooled

  • Candy corn, candy eyeballs, and Halloween sprinkles for serving

Directions

    1. Step 1For the crust: Preheat the oven to 325º. Line a 9-by-13-inch baking pan with parchment paper with at least 1 inch of excess paper over the sides.
    2. Step 2Process the Oreos in a food processor until finely crushed. Add the melted butter, and pulse to combine. Press the Oreo mixture into the bottom of the parchment-lined pan. Bake the crust for 10 minutes or until fragrant and dry to the touch. Let the crust cool at least 15 minutes.
    3. Step 3For the filling: Beat the cream cheese, vanilla, sugar, and salt in a large bowl with a mixer at medium speed 1 minute or until smooth. Beat in sour cream until well combined. Beat in eggs, 1 at a time, just until combined.
    4. Step 4Place 1/4 cup of the batter in a small bowl. Place 1/2 cup of the batter in a separate small bowl. Pour the remaining batter over the baked crust, spreading into an even layer.
    5. Step 5Stir the pumpkin into the bowl with 1/4 cup of the reserved cheesecake batter until combined. Stir the melted chocolate into the other bowl with 1/2 cup of the reserved cheesecake batter until combined. Spoon the pumpkin and chocolate batter by teaspoonfuls randomly over the top of the cheesecake batter in the pan; swirl with the tip of a wooden skewer or a paring knife.
    6. Step 6Bake the cheesecake for 35 to 40 minutes or until just set in the center (it will still jiggle slightly). Cool the cheesecake at room temperature for 1 hour, then refrigerate for at least 4 hours or up to overnight.
    7. Step 7Before serving, top the bars with candy corn, candy eyeballs and Halloween sprinkles. Cut into 16 bars.

Cheesecake bars can be made a day ahead. Store extra bars in an airtight container in the refrigerator up to 3 days.
