Make these crab-stuffed mushrooms once and friends and family will beg for them every year! This appetizer combines two beloved retro classics—stuffed mushrooms and crab puffs—into one irresistible bite. Here's a brilliant trick for mushrooms that'll hold their shape when stuffed: Roast them first, before adding the filling, to draw out some of their extra moisture. And don't worry: These elegant bites don't have to break the bank. Skip the more expensive jumbo lump crabmeat; regular lump crab or even claw meat blends perfectly with the cream cheese mixture and goes a lot further. Serve them as a finger food idea at Thanksgiving, Christmas, or New Year's (you might just get requests for all three).
What're crab-stuffed mushrooms made of?
The filling is essentially an elevated version of pimiento cheese, but with crabmeat folded in. It's made with cream cheese, cheddar, parmesan, pimientos, parsley, a little garlic, and a healthy helping of tender crabmeat. A crunchy panko topping and more fresh parsley finish them off.
How do you make stuffed mushrooms that aren't soggy?
Roasting the mushrooms helps to remove some of the extra moisture that can make them soggy. A filling that's creamy but not wet also helps. Remember to drain the pimentos well before adding to the mix.

large baby bella mushrooms (about 24 mushrooms)
- 1 Tbsp.
olive oil
- 1 tsp.
kosher salt, divided
- 4 oz.
cream cheese, room temperature
- 1/2 cup
finely shredded cheddar cheese
- 1/4 cup
finely shredded parmesan cheese
- 1
(2-oz.) jar of diced pimientos, drained and finely chopped
- 2 Tbsp.
chopped parsley, plus more for garnish
- 2
garlic cloves, grated
- 8 oz.
lump crabmeat, picked
- 1/4 cup
panko breadcrumbs
- 1 Tbsp.
unsalted butter, melted
Directions
- Step 1Preheat the oven to 400°F. Place a wire rack inside a foil-lined rimmed baking sheet; set aside.
- Step 2Remove the stems from the mushrooms and wipe the caps clean using a paper towel; reserve the stems for another use, if desired. In a large bowl, toss the mushroom caps with the olive oil and 1/2 teaspoon of the salt. Arrange the mushrooms, cap side up, on the prepared baking sheet. Roast until the mushrooms are mostly tender and have released liquid onto the baking sheet, about 20 minutes.
- Step 3Meanwhile, in the same medium bowl used to toss the mushrooms, stir together the cream cheese, cheddar, parmesan, pimientos, parsley, garlic, and the remaining 1/2 teaspoon of salt until well combined. Gently fold in the crabmeat.
- Step 4In a small bowl, stir together the panko and butter. Set aside.
- Step 5Stuff each mushroom cap with 2 to 3 teaspoons of the crab mixture and sprinkle with about 1/2 teaspoon of the panko. Return the stuffed mushrooms, cap side down, to the wire rack-lined baking sheet. Bake until the panko is golden brown and the crab filling is hot and melty, 15 to 20 minutes. Garnish with chopped parsley and serve immediately.
