About halfway through Thanksgiving dinner, I start thinking about all the different ways I can use all the leftovers. This casserole is one of my favorite post-holiday meals because it's really easy to make and calls for all the leftovers I always seem to have on hand. There's leftover turkey, dressing, green beans, and mashed potatoes. I even like to serve it with leftover cranberry sauce on the side! Yum. If you have a house of hungry folks to feed during the days after Thanksgiving, this comfort food dish is just the meal to make.
How long do Thanksgiving leftovers last in the fridge?
Most Thanksgiving leftovers will stay good for up to four days in the refrigerator. This includes the turkey and Thanksgiving side dishes. Just be sure to store both in airtight containers (or wrapped tightly in plastic) so they stay as fresh as possible. Cranberry sauce will last for a little longer—up to a week in the fridge.
What can you use instead of green beans in Thanksgiving leftover casserole?
Use whatever vegetables you have on hand. If you have extra aromatics like onion and celery, sauté 1 1/2 cups in butter until softened, and add them in place of the green beans. Peas, corn, or carrots, or a mixed veggie blend would also work in this casserole. If all else fails, just leave out the veggies altogether! This casserole is very adaptable, so don't be afraid to make changes here and there.

Ingredients
Salted butter, for the baking dish
- 4 cups
leftover stuffing
- 4 cups
chopped skinless leftover turkey (or use rotisserie chicken)
- 1 1/2 cups
coarsely chopped leftover green beans
- 1 1/2 cups
leftover gravy
- 3 cups
leftover mashed potatoes
- 1
large egg yolk
- 1 cup
shredded monterey jack cheese (about 2 oz.)
Cranberry sauce, for serving
Directions
- Step 1Position a rack in the lower third of the oven and preheat to 425ºF. Butter the bottom and sides of a 9-by-13-inch baking dish. Crumble the stuffing into the baking dish and pat to make an even crust on the bottom.
- Step 2Scatter the turkey and green beans over the stuffing layer. Pour the gravy over.
- Step 3Combine the mashed potatoes and egg yolk in a medium bowl and mix until smooth.
- Step 4Spread the mashed potato mixture over the turkey layer. Sprinkle with the grated cheese.
- Step 5Cover with foil and bake until heated through, about 20 minutes. Uncover and bake until the top is golden brown and crusty, 20 to 25 more minutes. Remove to a rack and let cool about 10 minutes before serving. Serve with a dollop of cranberry sauce on the side.
