Bacon-Wrapped Chicken with Garlicky Broccoli

Ingredients

  • 2 tsp.

    paprika

  • 1/2 tsp.

    garlic powder

  • 1/2 tsp.

    black pepper

  • 2 1/2 tsp.

    kosher salt, divided

  • 6

    skinless, boneless chicken breasts (6 to 8 oz. each)

  • 12

    slices thick-cut bacon

  • 1 Tbsp.

    maple syrup

  • 3 Tbsp.

    olive oil, divided

  • 1

    bunch broccoli, cut into florets (about 5 cups) 

  • 6

    garlic cloves, thinly sliced

  • 1/8 tsp.

    red pepper flakes

Directions

    1. Step 1Position racks in the upper and lower thirds of the oven. Preheat to 400ºF. 
    2. Step 2Combine the paprika, garlic powder, black pepper, and 1 1/2 teaspoons salt in a small bowl. Sprinkle the spice mixture on both sides of the chicken. Wrap 2 slices of bacon around each chicken breast, without overlapping. Place on a rimmed baking sheet, tucking the loose ends of the bacon under the chicken. 
    3. Step 3Bake on the lower oven rack until the chicken and bacon are cooked through, about 25 minutes. Switch the oven to broil. Brush the chicken and bacon with the maple syrup. Broil on the upper rack until the bacon is crispy, 2 to 3 minutes. 
    4. Step 4Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the broccoli and cook, tossing, until bright green, 2 to 3 minutes. 
    5. Step 5Add the garlic, red pepper flakes, remaining 1 teaspoon salt, and remaining 1 tablespoon olive oil to the skillet. Cook, tossing, until the garlic is sizzling, about 1 minute. Add 1/2 cup water and bring to a simmer; cover and cook until the broccoli is tender, 4 to 5 minutes. Uncover, increase the heat to high and cook until the excess liquid evaporates, about 1 minute. Serve the chicken with the broccoli.
