Spinach and Feta Chicken Burgers
Crumbled feta and tzatziki keep the burgers moist and delicious!

Ingredients
- 2 lb.
ground chicken
- 2 cups
baby spinach, finely chopped, plus more for topping
- 1/2 cup
finely crumbled feta cheese (about 2 oz.)
- 1/2 cup
panko
- 1/4 cup
plain Greek yogurt
- 2
garlic cloves, finely chopped
- 1
large egg yolk
- 2 tsp.
kosher salt
- 1 tsp.
dried dill
- 1 tsp.
dried oregano
- 1/4 tsp.
black pepper
Vegetable oil, for brushing
- 1
red onion, cut into 6 thick slices
- 3/4 cup
tzatziki
- 6
brioche buns, split and toasted
- 1
plum tomato, sliced
- 1/2 cup
sliced pepperoncini
Potato chips, for serving
Directions
- Step 1Combine the ground chicken, chopped spinach, feta, panko, yogurt, garlic, egg yolk, salt, dill, oregano, and pepper in a large bowl and mix with your hands until combined. Form into 6 patties just shy of 1-inch thick.
- Step 2Preheat a large cast-iron skillet over medium-high heat and brush with vegetable oil. Add the onion slices and cook until softened and browned on both sides, 3 to 4 minutes total (try to keep them from separating into rings). Remove to a plate.
- Step 3Reduce the heat to medium and brush the pan with more vegetable oil. Working in batches if necessary, add the patties and cook until nicely browned and cooked through, 4 to 5 minutes per side.
- Step 4Spread tzatziki on the buns. Top the bun bottoms with spinach, the tomato, pepperoncini, and the cooked red onion. Add the patties and bun tops. Serve with chips.
