These s'mores bars have all the toasty, comforting, gather-round-the-campfire flavor without having to stoke a single flame. With a buttery graham cracker crust, fudgy chocolate filling, and an oven-toasted marshmallow topping, this dessert is 100 percent kid- and adult-approved. The easy bars are also the perfect snack to bring to bake sales, cookouts, or any celebration that requires a bit of sweet campfire nostalgia.

Of course, in classic s'mores fashion, these gooey baked bars rely on the dream team of graham crackers, milk chocolate, and marshmallows. Instead of building a fire and toasting individual marshmallows to melt into soft milk chocolate, you'll build layered bars using the same familiar ingredients.

These s'mores bars start with a simple crust of graham crackers crumbs, butter, and sugar. You'll top the crust with the easiest fudge in the world (it's made with just melted chocolate and sweetened condensed milk). Add a sprinkle of marshmallows, get 'em nice and toasty, and your masterpiece is ready!

How do you toast s'mores bars?

Forget the campfire and crank up the oven! These easy bars toast to perfection under the broiler. But it works fast, especially with delicate marshmallows, so watch closely to make sure they don't burn. It only takes a minute or two!

What type of chocolate is best for s'mores bars?

To mimic the campfire treat, these bars are made with good ol' milk chocolate. If you prefer dark chocolate, your favorite bar will work just as well (or try a combo!). Combining the chocolate with sweetened condensed milk creates the most decadent, fudge-like filling. Plus, sweetened condensed milk helps keep the bars firm and sliceable.

Can you substitute graham crackers in s’mores bars?

This graham cracker crust is endlessly customizable. You can blitz any cookie or cracker in a food processor, such as Saltines, pretzels, chocolate graham crackers, chocolate chip cookies, cereal, gingersnaps, or even ice cream cones. You can also add up to a half-cup of crushed potato chips to the 2 1/2 cups of graham crackers for a touch of savoriness to balance the sweetness.

Can s'mores bars be made ahead?

Yes! In fact, these s'mores bars are easier to slice and serve if you make them 24 hours

in advance because the chocolate fudge layer needs time to cool and firm up. If you're in a pinch and need to slice the bars, stick them in the freezer for 20 minutes or in the refrigerator for one hour.

What's the best way to store s'mores bars?

Place cooled bars in an airtight container and store them at room temperature for up to a day. You can also freeze the bars for up to six months. Let them defrost on the counter before serving.

Ingredients

  • Nonstick cooking spray

  • 1

    (14.4-ounce) box graham crackers (27 full sheets)

  • 1 cup

    (2 sticks) salted butter, melted

  • 1/4 cup

    packed light brown sugar

  • 2 cups

    (12 oz.) milk chocolate, finely chopped or chips, plus more to sprinkle

  • 1

    (14-oz.) can sweetened condensed milk

  • 1

    (10-oz.) bag mini marshmallows 

Directions

    1. Step 1Preheat the oven to 325ºF. Place one oven rack in the center of the oven and a second oven rack in the upper third of the oven. Line a 13-by-9-inch baking pan with foil and spray with nonstick cooking spray.
    2. Step 2In a food processor, pulse the graham crackers until finely ground. Remove 1/4 cup of the crumbs for sprinkling on the marshmallows later. Add the butter and sugar, pulsing until well combined and the mixture holds together when pressed. Press into the bottom of the prepared pan, using the bottom of a measuring cup to pack it tightly. Bake on the center rack until golden brown, 10 to 12 minutes. Cool completely on a wire rack, about 30 minutes.
    3. Step 3In a medium heatproof bowl set over a pan of simmering water, combine the chocolate and the sweetened condensed milk. Heat, stirring constantly, until melted. Immediately pour over the cooled crust, smoothing into an even layer. Immediately scatter the marshmallows on top of the chocolate layer. 
    4. Step 4Heat the oven to broil. Place the bars on the rack in the upper third of the oven and broil until the marshmallows are toasted, 1 to 2 minutes.
    5. Step 5Remove from the oven and immediately top with the reserved graham cracker crumbs. 
    6. Step 6Place in the freezer for 20 minutes to set. Use the foil to remove the bars from the pan. Slice and serve.
