For years, sweet tooths of all ages have lined up at ice cream trucks, snack bars, and grocery store check-outs in anticipation of a bite of creamy vanilla ice cream encased in orange sherbet. With just two easy ingredients, this super simple tie-dye fruit dessert can be made at home! No need to run around town to curb your craving; this recipe makes a dozen homemade creamsicle pops that can hang out in the freezer for 1 month (or as long as they go uneaten)!
What is a creamsicle?
Before it was popularized by the folks at Good Humor and Dairy Queen (creator of the “dreamsicle”), a creamsicle was known as a sweet cocktail. Made with vodka, cream, orange liquor, and simple syrup, this cocktail can be shaken, stirred, and served as a shot or an orange soda and ice cream float. But its most famous variation does not have any alcohol at all. Rather, it features low-fat vanilla ice cream encased in orange sherbet.
How do you make a creamsicle popsicle?
This homemade version skips the complex coating and swirls the two flavors together for a groovy, tie-dye effect. The easiest orange sherbet in the world is made by blending frozen orange juice concentrate with vanilla ice cream. For an even more colorful frozen dessert, red and yellow food coloring can be added to make a vibrant orange. The remaining vanilla ice cream in the container makes the easiest white swirl.
Are homemade creamsicle pops made with popsicle molds?
This recipe uses popsicle molds that hold about ⅓ cup of filling. They are widely available and can make for some fun popsicle-making! But if the mood strikes without the popsicle molds, good old-fashioned paper cups with wooden sticks can also be used.

1 1/2-quart container vanilla ice cream, divided
- 1 cup
frozen orange juice concentrate
Red and yellow food coloring, optional
Directions
- Step 1In a countertop blender, blend 4 cups of the vanilla ice cream and the orange juice concentrate until well combined. Add red and yellow food coloring, if using. In a medium bowl, place the remaining 2 cups of ice cream and stir until smooth and spreadable.
- Step 2Spoon 1 ½ tablespoons of the orange mixture into the bottom of 20 (⅓-cup) popsicle molds. Spoon 1 tablespoon of the vanilla ice cream into each mold. Alternate adding the orange mixture and vanilla ice cream until the molds are full, to create a marbled effect. Use a butter knife or a popsicle stick to swirl the mixture more, if you like.
- Step 3Place the sticks into the popsicles and freeze until solid, 2 to 4 hours.
- Step 4When ready to eat, run the popsicle molds under warm water and gently wiggle the popsicles out.
- Step 5Store unmolded popsicles wrapped in plastic wrap or foil for up to 1 month.
Tip: Make the refreshing orange juice ever with the leftover concentrate! Simply add 1 1/2 to 2 cups of water to the remaining concentrate, stir, and enjoy.
