Anybody on the hunt for make-ahead, easy breakfast recipes should stick around for this baked oatmeal recipe! While overnight oats have been a meal prep darling for a while now, every now and then, everybody craves the warmth of regular oatmeal. But if maneuvering a stove or measuring ingredients before your first cup of coffee sounds like a little too much for your morning, these comforting, delicious, and satisfying baked oats are here to save the day. Plus, with tender, sweet fruit baked right into the oats, this nutritious breakfast casserole tastes like a berry crisp!

How can baked oatmeal be served?

Baked oatmeal can be served straight out of the oven, in refrigerated portions, or gently warmed in the microwave. They can be topped with anything like butter, maple syrup, almond butter, yogurt, or warm cream. A dollop of homemade whipped cream would not be a bad idea either.

How should baked oatmeal be stored?

Once cooled, the baked oatmeal can be stored, tightly covered, in the refrigerator for up to 5 days. Or, make meal prep a breeze and portion the oats into individual airtight containers and either refrigerate them or freeze them for up to 1 month. 

How do you reheat baked oatmeal?

While this baked meal is delicious at any temperature, a hot bowl of oatmeal is hard to beat! If you’re reheating the entire dish, pour ¼ cup of milk over the chilled oats, cover the dish with foil, and bake at 350 degrees until hot, 15 to 20 minutes. Individual portions can be reheated in a microwave-safe bowl in the microwave until steaming, 1 to 2 minutes.

Ingredients

  • Nonstick cooking spray

  • 1 cup

    sliced almonds

  • 2 cups

    old-fashioned rolled oats

  • 1 tsp.

    baking powder

  • 1 tsp.

    ground cinnamon

  • 1/2 tsp.

    ground ginger

  • 1/2 tsp.

    kosher salt

  • 2 1/2 cups

    milk 

  • 2/3 cup

    maple syrup, plus more to serve

  • 1

    large egg

  • 3 Tbsp.

    unsalted butter, melted

  • 2 tsp.

    vanilla extract

  • 1 cup

    fresh blueberries, divided

  • 1 cup

    fresh raspberries, divided

  • Greek yogurt, to serve 

Directions

    1. Step 1Preheat the oven to 375ºF. Lightly coat a 2-quart baking pan with cooking spray.
    2. Step 2Line a baking sheet with foil and pour the almonds on top. Toast the almonds until lightly golden, 7 to 9 minutes. Reserve ¼ cup sliced almonds and coarsely chop the remaining.
    3. Step 3In a large bowl, stir together the oats, chopped almonds, baking powder, cinnamon, ginger, and salt.
    4. Step 4In a medium bowl, whisk together the milk, maple syrup, egg, butter, and vanilla. Stir the milk mixture into the oat mixture to combine. Add ¾ of the blueberries and raspberries and stir again.
    5. Step 5Transfer the mixture to the prepared baking pan. Sprinkle with the remaining berries and almonds. Bake until the oatmeal is set and golden brown, 55 to 60 minutes.
    6. Step 6Let the oatmeal cool for 10 minutes. Scoop a portion into a bowl and serve with additional maple syrup and a spoonful of Greek yogurt.

Tip: Use any berry you like in place of the blueberries or raspberries. Cut larger fruit, like strawberries, to a uniform size, about 1/2-inch pieces.
