Ingredients

  • 1

    small head cauliflower

  • 1 cup

    all-purpose flour

  • 1 tsp.

    sweet paprika

  • 3/4 tsp.

    garlic powder

  • 1/2 tsp.

    kosher salt

  • 3

    large eggs

  • 1/2 cup

    Buffalo sauce

  • Vegetable oil, for frying

  • 1/2 cup

    blue cheese dressing

  • 4

    brioche buns, lightly toasted

  • Lettuce and sliced tomato, for topping

  • Carrot and celery sticks, for serving

Directions

    1. Step 1Cut the cauliflower into four ½-inch-thick steaks, keeping the core intact. Reserve the remaining cauliflower for another use.
    2. Step 2Fill a large deep skillet halfway with water and bring to a boil. Add the cauliflower and cook until fork-tender, about 5 minutes. Drain and let cool for 15 minutes. Wipe the skillet dry.
    3. Step 3In a shallow bowl, whisk together the flour, paprika, garlic powder, and salt. In a separate shallow bowl, lightly beat the eggs. Pour the Buffalo sauce into a third shallow bowl. Coat each piece of cauliflower in the flour mixture, then dip in the eggs, letting the excess drip off, then dip again in the flour mixture to coat completely.
    4. Step 4Heat ¼ inch of vegetable oil in the same skillet over medium-high heat until shimmering. Add 2 cauliflower steaks and cook until golden, about 2 minutes per side.
    5. Step 5Dip the fried cauliflower in the Buffalo sauce, turning to coat. Place the finished cauliflower on a platter and repeat with the remaining 2 steaks.
    6. Step 6Spread blue cheese dressing on the cut sides of the buns. Place a fried cauliflower steak on the bottom buns, top with lettuce and tomato, and close the sandwiches. Serve with carrot and celery sticks.
