white chocolate chips
- 2 Tbsp.
unsalted butter
- 1/4 tsp.
kosher salt
- 1 1/2 cups
crushed sugar or shortbread cookies (4-oz.)
- 1/2 cup
confetti sprinkles, divided
- 2 tsp.
vanilla extract
Directions
- Step 1In a large microwave-safe bowl, add the sugar cookie mix. Microwave on high in 30 second intervals, until a digital thermometer inserted into the flour reads 180˚F, about 1 to 2 minutes (check the temperature in multiple spots to get an accurate read). Stir well, then let cool completely. Remove any small clumps.
- Step 2Line a 9-inch square baking dish with aluminum foil and spray with cooking spray.
- Step 3In a medium saucepan, heat the sweetened condensed milk over medium heat, stirring frequently to prevent scorching, until hot. Add the white chocolate chips and stir until melted, 2 to 3 minutes. Stir in the cookie mix, butter, and salt until smooth; remove the mixture from the heat. Fold in the cookies, ¼ cup plus 2 tablespoons of sprinkles, and vanilla.
- Step 4Pour the fudge mixture into the prepared pan, smoothing the top. Top with the remaining 2 tablespoons of sprinkles and allow it to set up completely in the refrigerator before slicing, at least 2 hours.
