What is the best method of cooking pork tenderloin?
For pork tenderloin with a flavorful crust and moist interior, roasting in the oven or air fryer yields the best results. But first, you'll want to start with a flavorful rub. This recipe uses salt and pepper for base seasonings, with brown sugar to help promote browning on the exterior. Dried thyme, paprika, and garlic powder add additional flavor, but you can switch these spices up to suit your taste or what's in your pantry. Then, roast the pork either the oven or the air fryer at 400 degrees Fahrenheit for about 25 minutes total, flipping once.
Do you need to sear pork tenderloin before baking?
Not necessarily. Some recipes add a searing step in order to develop a flavorful "crust" on the pork tenderloin. For this recipe, the circulating air from the air fryer acts like a convection oven, giving the outside of the pork even browning as the interior cooks to the perfect temp (145 degrees Fahrenheit).
Is pork loin the same as pork tenderloin?
The cuts are different! Both come from the back of the pig, however pork loin is generally much thicker and sometimes has bones attached (think pork rib roast) and therefore will take longer to cook. Pork tenderloin is a boneless, much thinner, a more slender cut, and is what is used in this recipe.

Ingredients
- 1 1/2 lb.
pork tenderloin
- 2 tsp.
kosher salt
- 2 tsp.
light brown sugar
- 1 tsp.
ground black pepper
- 1 tsp.
dried thyme
- 1 tsp.
paprika
- 1/2 tsp.
garlic powder
- 1 Tbsp.
olive oil
Directions
- Step 1Remove the pork tenderloin from the refrigerator and pat very dry. Cut in half so that it will fit into the basket of a 6-quart air fryer.
- Step 2In a small bowl, combine the salt, brown sugar, pepper, thyme, paprika, and garlic powder. Brush or rub the olive all over the pork tenderloin. Sprinkle the spice mixture all over, pressing it in to the pork tenderloin to adhere.
- Step 3Place the two pieces in the basket of the air fryer with space between. Cook at 400°F for 10 minutes. Flip the pork tenderloin and continue cooking at 350°F for 10 to 15 minutes more, or until the internal temperature in each piece reaches at least 145°F.
- Step 4Transfer the pork to a cutting board and let rest for 5 minutes before slicing and serving.
Tip: Salt, sugar, and pepper are the important seasonings to include in the spice rub, but you switch up the other ingredients based on what's in your spice cabinet.
