mayonnaise
- 1/2 cup
sour cream or Greek yogurt
- 1/4 cup
olive oil
- 1/4 cup
chopped fresh flat-leaf parsley
- 3 Tbsp.
yellow mustard
- 2 Tbsp.
fresh lemon juice
- 1 tsp.
honey
- 1/2 tsp.
ground black pepper
- 1/2 lb.
deli ham, cubed
- 1/2 lb.
cheddar cheese, cubed
- 1
red bell pepper, chopped
- 4
green onions, sliced thin
Directions
- Step 1Bring a large pot of salted water to a boil. Add the pasta and cook for 1 minute longer than package directions. In the last minute of cooking, add the peas to the boiling water with the pasta. Drain, rinse with cold water, and let cool.
- Step 2In a very large bowl, whisk together the mayonnaise, sour cream, oil, parsley, mustard, lemon juice, honey, salt, and pepper until well combined. Fold in the pasta, peas, ham, cheese, bell pepper, and green onion.
- Step 3Cover and refrigerate until ready to eat.
Tip: If you don't have time to make your own dressing, use 1 3/4 cups of your favorite creamy bottled salad dressing.
