Steak Diane is such a delicious, classic beef dish. It's essentially a pan-fried steak topped with a creamy, savory steak sauce. And let me tell you something: it's pure, unadulterated bliss.

In fact, it's more than bliss. Just wait until you try it.

The steak is obviously very important here, but the secret is the sauce. Ohhh, the sauce. It's made in the same skillet that the steak is cooked in, so it has some of those delicious browned savory bits, but it also has things like garlic, onion, thyme, cream, balsamic reduction, and a big heaping spoonful of grainy mustard. Sometimes when steak dinner recipes like this are made in restaurants, the sauce is flambéed (like this bananas Foster recipe). But this version won't leave you with singed eyebrows. Just pull the skillet off the heat when you add the brandy… it's a cinch! Try this for a romantic Valentine's Day dinner or any special occasion.

What cut of steak is best for steak Diane?

I love a strip steak for a dish like this because it slices up really beautifully. I've also made it with filet mignon and that works great too. Whichever cut of steak you choose, just make sure you don't overcook it. That would be a crime. In fact, I'm pretty sure it is a crime in Osage County. Don't quote me on that.

I like my steak cooked medium-rare, which, if you use a meat thermometer, is about 130 degrees Fahrenheit internally. Use this handy steak doneness chart as a guide!

What can you use instead of brandy in steak Diane?

Whisky would work. Otherwise, if you'd rather skip the alcohol altogether, you can just use beef broth. You won't get the exact same flavor, but the dish will still be scrumptious.

Can you make steak Diane ahead of time?

This is one dish that's best served right away. The sauce comes together quickly, so the best thing you can do to work ahead is make sure you have all of your ingredients at arm's length. Go ahead and dice the red onion, slice the garlic, mince the chives, and measure out the other ingredients so they're ready to go when needed.

What do you serve with steak Diane?

I usually like to serve steak with a vegetable like sautéed green beans or creamed spinach and some sort of potato side dish. You’ll want something to sop up every last bit of the pan sauce so plan accordingly.

Ingredients

  • 2

    (8-oz.) strip steaks

  • Kosher salt, to taste

  • Black pepper, to taste

  • 2 Tbsp.

    salted butter

  • 2 Tbsp.

    olive oil

  • 1

    small red onion, finely diced

  • 3

    garlic cloves, sliced

  • 1 tsp.

    fresh thyme leaves

  • 1/2 cup

    brandy

  • 1 cup

    heavy cream

  • 1 Tbsp.

    whole-grain mustard

  • 1 Tbsp.

    balsamic reduction

  • 3 Tbsp.

    minced chives, for sprinkling

Directions

    1. Step 1Heat a large heavy-bottomed skillet over medium-high heat.
    2. Step 2Season all sides of the steaks generously with salt and pepper.
    3. Step 3Heat the butter and oil in the skillet. Add the steaks, and cook to the desired temperature, about 3 minutes per side for medium-rare (130°F internal temperature). Remove the steaks to a cutting board to rest.
    4. Step 4Add the onion, garlic, and thyme to the steak drippings in the skillet, and cook over medium-high heat, stirring, to soften, 2 to 3 minutes. Remove the skillet from the heat. Add the brandy and stir to combine. Return to the heat and deglaze the pan, scraping the bottom with a wooden spoon to release all the flavorful bits. Stir in the heavy cream, mustard, and balsamic reduction, and bring to a simmer. Season with a pinch of salt and pepper, and let cook to thicken, about 2 minutes. Remove from the heat.
    5. Step 5To serve, slice the steaks and shingle the pieces on a platter or plates. Spoon the sauce on top and sprinkle with the chives.
