Imagine the classic rice krispie treats you know and love—gooey, crunchy, and delightfully sweet. Now, imagine elevating them with salty, crispy potato chips! These potato chip rice krispie treats are a heavenly blend of salty and sweet. And to take them completely over the top, they're drizzled with ribbons of luscious melted chocolate. Perfect for bake sales, after-school snacks, or even Super Bowl snacks, these dessert bars are sure to surprise and delight.

What kind of potato chips are best for potato chip rice krispie treats?

You can use any brand of your favorite potato chips, but it’s best to stick with a plain salted variety. If you can find ridged potato chips, even better. Their extra-crisp and airy texture is an excellent contrast to the chewy marshmallow-coated puffed rice cereal.

Ingredients

  • 1/2 cup

    (1 stick) salted butter, plus more for greasing

  • 2

    (12-ounce) bags marshmallows 

  • 1/4 tsp.

    kosher salt

  • 5 cups

    rice cereal (such as Rice Krispies)

  • 5 3/4 cups

    coarsely crushed ridged potato chips (such as Ruffles)

  • 1/2 cup

     semisweet chocolate chips

Directions

    1. Step 1Butter a 9-by-13-inch baking dish, then line it with parchment paper, leaving a 1-inch overhang on two sides. 
    2. Step 2In a large pot, melt the butter over medium-low heat. Stir in the marshmallows until they're melted, about 5 minutes. Stir in the salt. Remove from the heat. 
    3. Step 3Gently fold in the cereal and 5 cups of the potato chips until combined. Transfer the mixture to the prepared dish and press flat into an even layer with damp or greased fingers.
    4. Step 4Microwave the chocolate chips in a medium microwave-safe measuring cup or bowl at 50% power in 10-second intervals until the melted and smooth. Transfer the chocolate to a zip-top plastic bag and snip off the corner. Drizzle three-quarters of the chocolate in a zig-zag pattern over the treats. (Alternatively, use a spoon.) Top with the remaining ¾ cup potato chips, distributing them evenly. Then drizzle with the remaining chocolate.
    5. Step 5Let the treats set up at room temperature for at least 3 hours or in the refrigerator for at least 1 hour. Use the parchment paper to gently lift the bars out of the pan. Cut the bars into three rows lengthwise by four rows crosswise to get 12 pieces.

Tip: Potato chip rice krispie treats will stay fresh for about 5 days; stack them in an airtight container with wax paper between each layer and store at room temperature.
