Ingredients

Cooking spray
- 2 1/2 cups
all-purpose flour
- 2 tsp.
baking powder
- 2 cups
sugar
- 1 Tbsp.
grated orange zest
- 2
sticks (1 cup) salted butter, at room temperature
- 3
large eggs, at room temperature
- 2 tsp.
vanilla extract
- 3/4 cup
orange soda, at room temperature
Glaze
- 24 oz.
white chocolate, chopped (about 4 cups)
- 2 tsp.
vanilla extract
- 1 cup
heavy cream
- 3
drops red food coloring
- 3
drops yellow food coloring
Directions
- Step 1For the cake: Preheat the oven to 350˚F. Spray a 13-by-18-inch rimmed baking sheet with cooking spray. Whisk together the flour and baking powder in a medium bowl. Combine the sugar and orange zest in a stand mixer and work the zest into the sugar with your fingers. Add the butter and beat with the paddle attachment on medium speed until creamy, 3 to 4 minutes. Beat in the eggs, one at a time, then the vanilla. Scrape down the bottom and sides of the bowl. With the mixer on low speed, gradually beat in the flour mixture, alternating with the soda, mixing well after each addition.
- Step 2Transfer the batter to the prepared pan. Bake until a toothpick inserted into the center of the cake comes out clean, 16 to 18 minutes, rotating the pan halfway through. Let cool completely in the pan on a rack, at least 1 hour.
- Step 3For the glaze: Combine the white chocolate and vanilla in a medium bowl. Put the heavy cream in a microwave-safe liquid measuring cup and microwave until steaming, 1 to 2 minutes (do not boil). Pour the hot cream over the white chocolate and let sit for 2 minutes, then stir until the white chocolate is melted and the glaze is smooth. Remove ½ cup of the glaze to a medium bowl. Stir in the food coloring to make a deep orange color.
- Step 4Pour the white glaze over the cake, spreading with an offset spatula to cover. Drizzle the orange glaze on top and spread and swirl with the offset spatula for a marbled look. Let the glaze set at least 45 minutes before serving.
