And here's the best part: this brisket practically cooks itself, thanks to the trusty slow cooker. That's right, you can put your slow cooker to work in the summer, it's not just for wintery stews! A tough cut like brisket just loves that low-and-slow treatment, and the results are pure magic. Pair it with a crunchy ranch slaw and plenty of pickles for a meal to remember. And if you end up with leftovers, turn them into brisket tacos or tostadas—talk about the gift that keeps on giving!

Ingredients
- 2 Tbsp.
packed light brown sugar
- 2 Tbsp.
kosher salt
- 1 Tbsp.
garlic powder
- 1 Tbsp.
smoked paprika
- 2 tsp.
chipotle chile powder
- 2 tsp.
black pepper
- 1 tsp.
mustard powder
- 1
(4- to 5-pound) piece flat-cut beef brisket
- 1 1/2 cups
barbecue sauce
- 2 Tbsp.
Worcestershire sauce
White bread and pickle slices, for serving
Directions
- Step 1Combine the brown sugar, salt, garlic powder, smoked paprika, chipotle chile powder, pepper, and mustard powder in a small bowl.
- Step 2Trim some of the fat from the brisket, leaving about a ½-inch-thick layer. Rub the spice mixture all over the brisket. Wrap well in plastic wrap and refrigerate overnight.
- Step 3Whisk together the barbecue sauce and Worcestershire sauce in a 6-quart slow cooker. Add the brisket, fat-side up. Cover and cook on low until very tender, 10 hours.
- Step 4Preheat the broiler and line a baking sheet with foil. Transfer the brisket to the baking sheet (reserve the cooking liquid in the slow cooker). Broil until the brisket is dark and bubbling, 3 to 5 minutes. Let rest for 15 minutes.
- Step 5Pour the reserved cooking liquid into a large liquid measuring cup and skim off the fat. Thinly slice the brisket against the grain. Serve with bread, pickles, and the cooking liquid.
