Oh boy, do I love hot chocolate. And that's never going to change. I've got way too many childhood memories and nostalgia tied up into a piping hot cup of cocoa with marshmallows on top. It's the perfect treat for a cold night, paired with snuggles on the couch and a good movie. I feel cozy inside just writing that.
When I'm at a hotel and see a packet of hot chocolate mix, I'll usually make myself a cup, driven by my previously mentioned nostalgia. Though I have to admit that I cringe when I read the list of ingredients on the back. Most store-bought hot chocolate mixes have hydrogenated oils, preservatives, and other undesirable things in them. The good news is that when you make it at home, none of that gets included, and the results are still delicious! In fact, they're even more delicious, if you ask me. Just keep the mix in the pantry and add hot water whenever you want some homemade hot cocoa. Otherwise, make a big batch and pack it into jars to share as a homemade food gift with family and friends.

Powdered sugar, cocoa powder, and powdered milk (or instant nonfat dry milk)... that's all you need!
How do you doctor up hot chocolate mix?
Marshmallows are a given, but you can also add a dash of cinnamon or cardamom, or cayenne or chili powder for some smoky spice. A splash of extract like vanilla, almond, or coconut can also be delicious. For a grownup beverage, try spiking it with homemade Irish cream.

unsweetened cocoa powder

powdered milk or instant nonfat dry milk
Directions
Step 1Sift the confectioners' sugar followed by unsweetened cocoa in a large bowl, to get rid of any lumps.
Step 2Stir in the powdered milk and whisk well until everything is combined.
Step 3Add mini marshmallows to the container, if desired. This can be kept in the pantry for 6 months.
Tip: As a guideline, 1/2 cup of cocoa mix and 1/2 cup hot water is the right amount for me to enjoy in one serving. I like to put the hot cocoa mix in the cup and add the hot liquid on top, and stir, in order to not get any lumps. Enjoy!
