Linzer cookies are those beautiful sandwich cookies, usually in a heart-shape. The top cookie has a “window” showing the raspberry filling. The cookies are typically dusted with powdered sugar making them extra pretty.

Linzer cookies always make me want to throw a tea party. Or put on a dress and a big hat. Or watch PBS. Linzer cookies are special.

This giant linzer cookie is inspired by the Big, Fat Linzer Cookie in Pam Anderson’s book, Perfect One-Dish Dinners. I love the idea of a giant cookie, and what better day to share a heart-shaped cookie than Valentine’s Day?

For the cookie dough, I used part flour and part almond flour, in a nod to the Linzer torte which usually contains ground nuts.

The vanilla and almond flavors marry with the raspberry preserves so well. True love.

You’ll line a large heart-shaped pan with parchment. It’ll keep the cookie from sticking to the pan and the edges will help you remove the cookie from the pan without breaking it.

(I purchased my pan from Amazon, but I have seen them at baking and craft stores.)

Divide the dough in half and bake one half at a time.

You’ll cut out a heart from the top layer, but do this after the cookie comes out of the oven.

Once the cookies have cooled, spread raspberry preserves on the bottom cookie.

Top with the second cookie with the cut-out heart.

Dust the entire cookie liberally with powdered sugar. Cut into pieces and serve.
