Of course, we love summer's juicy tomatoes and fresh corn on the cob. But autumn harvests bring a whole new round of delicious vegetables to the table. From squashes to root vegetables, there are plenty of options for whipping up creative side dishes, fall salads, and casseroles that are full of seasonal flavor. If you're tired of the same-old veggies for every meal, it's time to add some fall vegetables to your shopping list.

While nearly all of these vegetables are available year-round, autumn is when they're in peak season. It's when they're the most delicious and it's also when you'll find them available locally. Plus, there are even a few vegetables to grow, such as radishes and kale, that are beginner-friendly so you may want to plant them in your own fall garden!

This nutrition powerhouse packs a punch with loads of vitamin A, B6, C, K, and calcium and potassium. Plus, it's a great vegetable to plant late in the season because it's hardy and will withstand an early frost with ease. Make kale chips by drizzling pieces of kale with olive oil and sea salt, then baking until crispy. Or steam, stir fry, or add to stews. You can also use raw baby kale in salads.

Butternut Squash

This familiar winter squash stores well, so you can pick it up when you see it and store it in a cool, dark place for several months. Butternut squash can be peeled and roasted, then drizzled with maple syrup and olive oil. Or chop it up for stews, puree for soups, or serve as an alternative to sweet potatoes.

Beets

Canned beets are often bland, but fresh beets are sweet, earthy, and delicious. Both the greens and the rounded root portion of beets are edible. Sauté the greens with olive oil and garlic, and roast the root portion until fork-tender. Then rub off the skins when cool using paper towels (it's messy but worth the effort).

There are so many different types of squash available in the fall—from acorn squash to delicata squash to the lesser-known buttercup squash. Their sweet flavor is amazing when roasted, mashed, or served as a Thanksgiving side dish. And, as the name implies, they'll keep well into the winter months when stored in a cool, dark place.

Look for golden potatoes with silky flesh that's ideal for baking or mashing, or roast chunks of any kind of potato with other seasonal root vegetables such as turnips and squash.
